
WHY
Less is More.
We’ve been creating wines for years and what we both clearly agree on is the thrill of discovering a place which enables the grape to channel all of its beautiful energy through to the glass – without any makeup. This requires planning from as early as the growing season to when they are harvested and how we extract the juice from the grapes.
This is where our Less is More philosophy comes into play.
Our goal is to simply guide the fermentation through in a stable and healthy form with minimum intervention. We don’t seek great extraction of tannins in the wine – think Green Tea vs Espresso – our winemaking style is purity, subtlety and elegance.
